Texan Burger

Ingredients:

Makes 2 Burgers

  • 12 oz of ground red meat (bison is pictured but beef is delicious too)

  • 4 strips of thick cut bacon

  • 2 slices of habanero jack cheese (pepper jack is fine too)

  • Pickled jalapenos

  • 1 medium yellow onion

  • 1 cup whole milk

  • 1 cup seasoned flour

Directions:

  • Form your meat into 6 ounce patties. Place in refrigerator.

  • Cook your bacon however you want. Many people prefer it in a skillet. We prefer to do it in a 400 degree oven. Line a cookie sheet with parchment paper and place your bacon strips. Cook in oven until desired crispiness. We like it crispy, about 10 minutes for us. Set aside for later.

  • Prep your onion. Cut of the ends, then cut into thin circles. Submerge your onions in milk, then dredge in seasoned flour and put on a plate.

  • Fill a heavy bottomed pot halfway with oil. Use a high temperature oil like vegetable, canola, or peanut. Heat oil to 350 to 375 degrees.

  • Fry onions a small handful at a time. It wont take long for each batch, about 3 to 5 minutes. Remove when golden brown.

  • Heat a cast iron skillet to medium high heat. Take your patties out of the fridge. Season liberally with salt and pepper.

  • Place patties in skillet and DO NOT TOUCH THEM. Cook for 5 minutes, then flip. Cook another 5 minutes. This should get you about a medium-rare to medium burger.

  • Assemble your burger! I prefer it in this order: bun, patty, cheese, bacon, jalapenos, onion strings, mustard on the top bun.
